A defining feature of the estate is its use of ancient underground clay amphorae (tinajas) for fermentation and aging, a traditional method that enhances texture, purity, and aromatic complexity. In the cellar, the philosophy is low intervention, with native yeast fermentations, gentle extraction, and minimal sulphur use. The resulting wines are fresh, textured, and highly expressive, offering a unique balance between tradition and innovation.
