Émilie and Jean-Marie Fabre are winemakers at Domaine de la Rochelierre in Fitou, one of the oldest appellations of the Languedoc and a benchmark for structured, Mediterranean red wines. As a new generation at the helm, they continue a family legacy while pushing the estate toward greater precision, organic farming, and refined terroir expression. Working between the coastal plain and the foothills of the Corbières, their vineyards benefit from a distinctive dual influence: limestone and clay soils closer to the sea, and schist and rocky hillside parcels inland. The Mediterranean climate, moderated by sea breezes and altitude variation, allows for optimal ripening while preserving freshness and balance. Specializing in classic Fitou varietals such as Carignan, Grenache, Syrah, and Mourvèdre, Émilie and Jean-Marie Fabre produce wines that are structured, vibrant, and deeply expressive of their rugged terroir. Their vineyard approach is certified organic, with a strong focus on biodiversity, low yields, and meticulous manual work. In the cellar, they follow a low intervention philosophy, using native yeast fermentations, gentle extraction, and carefully managed aging to preserve purity, texture, and authenticity.
