Rare Single Malt Whisky ~ Very Sherried 25 y.o. ~ 45% ~ 500mL

Classic old school when the single malt is matured more than 20 years in sweet PX cask. Dark amber robe, ruby reflections. Vanilla, almond and sherry flavours: fascinating tropical-style sensuality. Intense silky texture. Extremely complex and concentrated: one centilitre per balloon glass may procure 15mn of ecstasy. Longer same kind of maturation as Blossoming, its colour becomes more "burned", keeping very nice reddish reflects. Old single cask may appear not easy to drink because tight, strong and concentrated characters. Let open in glass, it will open: mellow, delicious balance between flavors and powerful, not agressive, absolutley tender.

Michel Couvreur

Michel Couvreur had a very personal, and truly revolutionary vision of what whisky should be: more than terroir, more than the distiller’s touch, it was the maturing in oak casks that truly helped the grain spirit become whisky. From 1978 on, having settled in the French region of Burgundy, he decided to make it his life’s work and to dedicate his research to a process which he once compared to cross-fertilisation.

Michel Couvreur passed away in 2013; his son-in-law Cyril Deschamps and his cellar master Jean-Arnaud Frantzen, with the invaluable help of Michel’s devoted wife Marthe and his daughter Alexandra, follow to the letter the philosophy and the motto of the house: Virtute et Opera.
